This morning, I finally made some oatmeal! Blogland loves oatmeal. The food blogs I read swear by the stuff. They claim it gets them through their mornings better than anything else.
I trust my fellow food bloggers and have tried many of their recipes, but, for some reason, I just don’t love oatmeal. I give it a try once in awhile to see if my palate’s changed at all. And, I am happy to report…I sort of think it has! I actually enjoyed this morning’s oats!
I followed Kath’s Whipped Banana Oatmeal recipe, but using only the ingredients I had on hand: oats, super ripe banana, cinnamon, vanilla extract and peanut butter. Ideally, I would have some flaxseed meal and milk for this, but I do not. Thus is life.
Method: With the temperature on medium, I heated 1/2 cup of oats with 1 cup of water on the stove top. I let it sit until it started to bubble. I then added a coarse-chopped banana and stirred for about 2 minutes until all the water was absorbed. At that point, I cut the heat and added a dash of vanilla extract, lots of cinnamon and ~2 Tbsp. of peanut butter.
It was a great breakfast for this snowy/rainy/dreary day in NYC.
Now, I’m not giving up my PBBT, but I am certainly adding oatmeal into the weekly rotation. The banana makes this oatmeal super creamy and fluffy. The bites with the peanut butter were my favorite, of course. PBBT usually holds me over until 11:30 (I eat breakfast around 7:30 and lunch at 12-12:30). Let’s see if oatmeal can get me til 12!
